What advice would you give?

I would focus on eating more. Depending on your capacity, I'd shoot for an additional 500 - 1kcal on top of what you usually eat.

My plan was to try to eat around 3,000-3,500 calories a day in that time frame to see how much I gain even if I don’t make my goal

This is more reasonable.
I just want to eat enough that I know I’m guaranteed to gain weight and see results relatively fast
